You don’t have to be an experienced cheesemaker to create cottage cheese right in your kitchen. Early food storage methods might have led to the first cheeses, and I recommend starting with fresh white or cottage cheese. It is a wonderful dairy product to eat it fresh.

Indeed, only the highest quality dairy you can get is good for the excellent tasting result. However, if you use store-bought milk, it is most important to ensure that it is not ultra-pasteurized. Milk pasteurization means that milk was heated for a long time. Thereby, it removes most of the beneficial bacteria cultures and microbes, which are essential in cheesemaking. But the best choice is fresh raw unpasteurized milk obtained from a reliable source.

You may use either full-fat milk or skim milk for making cottage cheese. Or you may add some cream to your skim milk. In all cases, you will get an excellent dairy product that will simply differ in fat content and texture. After separating raw milk, I usually have a lot of skim milk left. Making cottage cheese is one of the options for processing this kind of milk. The good news is that you can store the cottage cheese for a very long time in the freezer and use it later.

 

How To Make Clabbered Milk?

 

You don’t need any liquid animal rennet or starter culture to make perfectly tastes cottage cheese. My method and tips will help you with this task. Leave the skim milk to sour at room temperature. Some cheesemakers mix it with an acid like vinegar or lemon juice to speed up the souring process. Usually, I do not do that. The beneficial bacteria which are already in the milk will do the job. Usually, it takes three to five days. Clabber is ready when soured all through.

 

What Are The Basic Steps For Making Fresh Cheese?

 

Place the jar with clabber in a big pot filled with water. It calls «a water bath.» With this method, clabbered milk will be heated evenly.

For the same purpose, it’s always a good idea to cut the curd with a long knife. Slowly bring clabbered milk over medium-low heat to 110-120° F. Increasing the temperature inside the clot will make it drier and grainier. I do not recommend exceeding a temperature of more than 130° F. Then, take it off the heat and leave it to cool. This stage may take a couple of hours or even more. When your curd reaches room temperature, drain the whey. Grab the edges of the cheesecloth and make a bag. Hang it to drain over a big bowl until it stops dripping. The longer the cottage cheese hangs, the drier it will turn out.

And that’s it. Full of flavor, cottage cheese is ready! Drizzle it with olive oil and flaky salt, or serve with fresh fruits and honey. It’s an excellent choice for canapés. Its mild flavor complements many other ingredients. You can eat it right away without aging or reserve it for later in your freezer. You may always use it in your recipes. The options are endless.
